Authentic Italian Sweet Crespelle Recipe: A Light and Fluffy Pancake Dessert
Crespelle’s are basically the Italian version of Crepes, which are essentially thin pancakes. They are so light and easy to make that you’ll want to eat them every morning! The toppings are endless – like the classic Nutella and fruit or cheese and honey – so get creative and find your favorites!

Sweet Crespelle

Ingredients
- 4 eggs (lightly beaten)
- 1 1/3 cups milk
- 2 tbsp butter (melted)
- 1 cup flour (all-purpose)
- 2 tbsp sugar
- 1/2 tsp salt
Instructions
- In a large mixing bowl, first lightly whisk together the eggs, milk, and melted butter. Then whisk in the flour, sugar, and salt until everything is smoothly combined.
- Start heating a medium sized skillet or non-stick pan over a medium heat.
- Lightly grease the pan with a light oil or butter.
- Once the pan is hot enough, use a spoon or small ladle to scoop out about 3 tablespoons worth of batter and gently pour it in the middle of the pan while simultaneously tilting the pan so the batter can evenly coat the bottom in a thin layer.
- Cook on each side about one or two minutes, or until they are golden brown.
- Serve them on a plate and lightly coat in a layer of your favorite butter or jam, and then top with some sliced fruit if desired.

I used to work at this place that did Nutella pizzas with sliced strawberry’s on top. The owner’s whole thing was literally bougie pizza. We had two, 17 foot tall floor to ceiling stone fire giant pizza ovens. Why would we not just make this perfect thing? It’s a little trickier than throwing some dough into the pizza oven but it’s this makes so much more sense. Moral of the story: Eat this and be cautious egocentric guys trying to put a fusion twist into their restaurants.
