Authentic Italian Penne Pasta with Salmon and Vodka Sauce: A Creamy and Delicious Dish
Penne pasta with salmon and vodka is one of the tastiest ways to revisit a great classic of the 1970s cuisine. In fact, the vodka pennette became popular in kitchens around the world thanks to their exotic flavor and fast preparation times. This dish is an appetizing choice to bring to the table and a very simple and tasty first course, especially for salmon lovers who like to take advantage of this versatile ingredient!

Penne Pasta with Salmon and Vodka

Ingredients
- 400 grams Penne Pasta ((14 ounces))
- 35 grams Scallion ((1.25 ounces))
- 150 grams Tomatoes ((1 third of a pound))
- 2 grams Chives
- 200 grams Smoked Salmon (( 7 ounces))
- 40 grams Vodka ((1.5 ounces fl))
- 200 grams Half and Half ((7 ounces fl))
- 40 grams Extra Virgin Olive Oil ((1.5 ounces fl))
- 1 tbsp Salt
- 1 tbsp Pepper
Instructions
- First, prepare all of the ingredients! Cut the tomatoes into fourths, mince the shallots and the chives (separately), chop the salmon into strips.
- Heat up a large frying pan on medium heat and drizzle in a decent amount of olive oil. Once the pan is hot enough, add the shallots and cook for 1-2 minutes.
- Add in the chopped salmon and let it fry up for a couple minutes. Then, slowly pour in the vodka and let that cook until most of the vodka has cooked off.
- Now, add the tomatoes and chives in. Let those cook for 1-2 minutes, then add in the half-n-half, salt, and pepper. Turn the heat down to low and let this simmer while you make the penne pasta.
- Once the penne is ready, drain and add the pasta straight to the frying pan. Turn the heat off and make sure to thoroughly coat the penne in sauce.
- Serve it up and pair with a crisp white wine for the perfect dinner!
